"-- That fancy Elder Wand. Personally I woulda hung on to it, but I guess that's why I'm not a boy wizard. One thing though: if Grindelwald was rockin' the Deathstick, how did Dumbledore best him in a duel? What am I missing?"
It's because the Elder Wand is not truly all-powerful, much like the Invisibility Cloak wasn't all-powerful (Mad-Eye Moody's eye could see through it, for example). The Hallows themselves are powerful magical objects, but it is the mythology that surrounds them that elevates them to the perception of having an all-powerful nature. Rowling does this often; building something up and shattering it with jarring honesty.
And about the epilogue, I understand why you didn't like it, but it really grew on me. Rowling could have stuffed it chock-full of information about what happened to ever major and minor character, but I feel it flows better the way it is. We see the essential troubles Harry dealt with throughout the series finally lifted off him. In the end, he got what he wanted - a family and a mundane life, talking to Ron about parking, of all things. It's a nice, cosy close to the series. But that's just my opinion.
Oh, and if we're lucky, we'll find out all the juicy details about our characters' futures in the Scottish Book (which is the Harry Potter encyclopedia Rowling has admitted to working on).
