Welcome to Cyber Monday 2011, another day of manic shopping madness! This one’s supposed to break last year’s record, if it matters, just like Black Friday apparently did (by as much as 26%) last week. Still shaking off Black Friday and the holiday eat-shop-eat-sleep-eat binge that followed? Here’s a quick rundown of what’s shaking in crazy-crazy online deals-land, tech-wise:

Best Buy

It’s hard to find the “deals” in Best Buy’s lackluster Cyber Monday lineup, but the company’s offering the entry-level monochrome Nook Simple Touch for $79.99 (regularly $99), a couple Apple 15-inch MacBook Pros discounted $150 to $200 and teasing a $10 “e-gift” card with store pickup orders (order online, drive in) of $100 or more.

Target

Things looks a bit more intriguing at Target, where you can grab a Samsung 40-inch 1080p LED TV for $700 (regularly $1,199) or an LG 50-inch 720p Plasma TV for $549 (regularly $749), and if you pick up the Gears of War 3 edition Xbox 360 for $399.99, Target’s tossing in a $75 store gift card.

Newegg

Hardcore tech enthusiasts should have a look at Newegg’s Cyber Monday lineup, which includes an Intel Core i3-2120 Sandy Bridge 3.3GHz LGA 1155 CPU for $119.99 (was $139.99), 8GB of Corsair XMS3 (2 x 4GB) 240-Pin DDR3 SDRAM for $37.99 (was $47.99), a 42-inch LG 1080p LED TV for $499.99 (was $799.99) and a Dell Inspiron 15.6-inch laptop with 2.3GHz Intel Core i5 processor, 4GB memory and a 640GB hard drive for $499.99 (was $749.99).

Amazon

You won’t find a deal on the Kindle Fire, which just propelled the company to four times its Kindle sales this time last year, but you can get your hands on a big-screen Kindle DX for $259, a nice drop from the regular $379. You can also pick up a Canon PowerShot S95 10MP digital camera for $291, down from $399.

Office Depot

The depot’s claiming several interesting web exclusives, including an Asus 15.6-inch laptop with LED screen and AMD dual-core E-350 processor for $349.99 (regularly $499.99), as well as a 15.6-inch Toshiba Satellite laptop with LED screen and AMD dual-core C-50 processor $299.99 (regularly $429.99).

Walmart

Want a 47-inch LG LED 1080p TV for $879 (regularly $1,199)? Walmart’s selling that, as well as Apple’s Wi-Fi + 3G iPad 2 for $688 (regularly $729) with a starter accessory bundle. Walmart’s technically dubbed its deals “Cyber Week” specials, so assuming supplies last, you’re good through Friday.

Dell

Dell’s running a bunch of fair-to-decent deals (some already sold out as I’m typing this), including a 46-inch Sony Google 1080p TV for $798 (was $1,398), a Dell-brand 22-inch “ultra-thin” LED monitor for $139.99 (was $219.99) and a Dell V715W all-in-one printer for $99.99 (was $169.99).

Xbox LIVE

That’s right, Xbox LIVE, which means you’ll need an Xbox 360 to shop. Assuming you have one, you’ll definitely want to check out Beyond Good & Evil HD, on sale for just 240 Microsoft Points (about $3, or 75% off).

We’ll keep adding deals as we find them, so check back throughout the day!
